Mashed at 152*F for 90 minutes, and vorlaufed 3 times at 2 quarts. Runnings were cleared by this time, and took my first runnings sample. Once cooled, measured out at 1.071. Sparged with 170*F-ish water for 15 minutes, but the mash only reached about 148*F for my second runnings. Reached my volumes this time, but not my gravity. Only achieved about 62% efficiency, even though I thought I did a better job this time. I will start measuring out my recipes for 64-65% efficiency, so I will at least be closer to my target gravity numbers. 11/18 - Airlock is still bubbling at a steady rate of around a bubble every 2 to 3 seconds. Looking to transfer to a 3 gallon carboy this weekend for a secondary fermentation for a couple of weeks, or until the fermentation has completed. I will hold this around 66-68 degrees, or whatever my spare bedroom will hold at (generally cooler than the rest of my house as I have the AC vent closed and the door stays shut). 11/21 - Transferred to a 3-gallon carboy for secondary fermentation. Gravity reading - 1.020. Hopefully it will continue fermenting just a tad bit more to get down to 1.016-1.018. A few globs of yeast were floating on the top, but other than that, most had settled out. Sample had a nice spice taste to it. 12/5 - Bottled with 2.33oz of Corn Sugar for 2.3 volumes of CO2. Sample had a nice taste to it with some subtle spiciness.
