Sierra Nevada Pale Ale Brew Session

Brewing today, it's been a while since I've made this recipe. I'm using whole leaf hops today, except for bittering. They're a pain to deal with but that's what Sierra Nevada does. My mash temp came in high 152.2 instead of 150, I just let it roll. Ended 60-minute mash at 151.9. I had great extraction today, hit 1.058 O.G. and came in at a bit over 6 gallons of beautiful gold wort. Pitched yeast at about 61 degrees and will ferment at 63 for a few days then let it rise to 68 to finish. I used Cellar Science Cali ale dry ale yeast today, first time using, I've read it's repackaged US-05. Visible fermentation had started about 6 hours after pitching at 61 degrees and was well underway by the next morning. I added my Cascade dry hop on Thursday 03/06/25 while fermentation was still very active. I might add a small second addition of dry hop, haven't decided yet. I'll sample it when I take a gravity reading and see if it needs it. I took a gravity reading on 03/14/25, the beer is at 1.008 and is done, I tasted the sample and felt like it was nicely hoppy. I'll bottle this soon. I bottled this beer today 03/19/25 and ended up with 60 bottles of of 6.6% ABV beer. Tastes good uncarbonated and is nicely hoppy, tastes like a SNPA, the first hoppy beer that I ever liked, and the on that sparked my love of hops. I'll let this carb up and then make some tasting notes.

Notes:

Beer turned out really good, nice gold color, carbonation is perfect, lots of lacing on the glass, hop aroma and flavor are both good, whole cone hops have a smoother flavor, and the beer seems to carry more body when I use them, the bitterness isn't sharp, it's there, but not harsh. Clarity is not great, I didn't cold crash or use finings and turned this fairly quickly, so it's about what I expected. Really nice beer, sediment in the bottle is compact. I'm glad I rebrewed this.
