Brewing with a bit of a change in hops, didn't have any Ahtanum hops, replaced with Comet. Bittered with Galena instead of Magnum. Mash temps were rock solid at 153.7 for the 60 minute mash, brew was smooth, I boiled vigorously and ended up a quart light or so in volume at 5.75 and the O.G. of a whooping 1.080. Wort was a beautiful gold, tasted as expected, sweet and bitter, I'm going to double dry hop this, threw a bit of citra and comet and centennial into the dry hop along with amarillo and simcoe. I'll add the first charge at around 3 days, the rest once fermentation is complete. Kicking off fermentation at 63.5, will ramp up to 68 over the course of a week or so. Added the second dry hop today 03/31/22 and took a gravity reading, it's at 1.012 right now, likely done or very close. Beer is still cloudy, probably the loose hops from the 1st dry hop contributing some to that, I'll let it sit with the 2nd charge of hops for a week or so, the bottle shortly after that. The beer smells great, full of hop aroma, tastes good even warm and uncarbed, a touch of sweetness and a nice bitter finish with a full hoppy flavor. Should be good. Bottled today, got 53 bottles of clear, hoppy, light gold beer. Tastes good uncarbed, tons of hop aroma and flavor. Very nice, primed this comes in about 9.3% abv, but hides it well.
