Brewing for the Brewtoberfest Oct 9, 2021 event is back on after a COVID hiatus. Smooth brew day, volume about a quart heavy. I added a half ounce of mandarina bavaria hops with 5 min left in the boil for just a hint of citrus in the beer. I'll ferment at about 64 for a couple of days and then I'll add 2 quarts of fresh watermelon juice 3 days into fermentation and then gradually bring the temp up to 68 to finish. Bottled 09/27/21 with appoximately 3 ounces of natural watermelon extract and ended up with 63 bottles of a nice flavorful wheat beer, uncarbed the watermelon was noticeable but not overpowering. The beer finished nice and dry and will end up around 6.5 ABV. Looking forward to tasting after it's carbed.
