(Include any important notes from brew day until tasting)
Mash temps were stable, was started at 149.7 and ended at 149.4, ended up just shy of 6 gallons into the fermenter and just a bit high on O.G. at 1.063, smooth brew day, the wort tasted great and is a light yellow gold. I'll dry hop the first dose when fermentation is still active and then dose again once fermentation is complete. I'm kicking off fermentation at just under 64 and I'll raise it to 68 during the course of fermentation. This should be a low hop bitterness beer with high flavor and aroma.
Took a gravity reading on 4/2/20 and the beer is sitting at 1.008, tasted very nice, very good hop flavor and aroma, I also added the second dry hop today, I added the first one on 3/28/20 while fermentation was still active and the aroma really was prevalent every time I opened the door to the fermentation chamber. I'll bottle in a week or so but it's looking and tasting good. the hazy is still holding I'll see if that continues through bottling. Bottled today, ended up with 56 bottles of hazy yellow gold beer, it's tastes a bit dry to me, which brings out more bitterness that I was aiming for in this beer. I'll see how it tastes after it's carbed up, the hop flavor and aroma were nice, just a bit too dry.
