Mash temps were great today, I screwed up and added an extra gallon of water to the mash, I'll boil 90 vs 60 and see how that looks and boil longer if needed, the gravity was 1.041 pre boil so efficiency was a bit better than expected. Ended up with just over 6 gallons in the fermenter with an O.G. of 1.059, wort looked and tasted great, I used about 2.5 ounces of roasted barley and the color really turned out to be what I wanted. Fermenting at just under 63 right now, I'll bring it up to 68 over the next few days. Took a gravity reading on 4/2/20 and this is at 1.010, done fermenting and clearing nicely, I'll bottle in a couple of days tasted the sample, very nice, just a touch of dark fruit, a bit lower that Smithwick, my reference, but I enjoy it just a bit milder. Bottled this today, ended up with 57 bottles of very clear Irish Red, the small bit leftover was very nice and turned out just like I'd hoped. I'll test it in a couple of weeks.
