My plan is to draw off 1 gallon of the finished wort, mix with a gallon of cider, and ferment that mess out with Imperial Monastic. I ended up mashing 3.5 hours, which really cranked up my efficiency. No issues with the brew day. Pitched about a cup of yeast into both tanks, after aerating for 1 minute each. In the graff tank, I pitched Imperial Monastic. 10/18 - The vossaol is bubbling like mad. The graff is not yet bubbling. 10/20 - The vossaol is done fermenting. The Graff is slowly bubbling still, lots of foam. I will let the Graff sit for a month but next week I plan on bottling the vossaol. 11/1 - bottled today. Tastes like a pilsner with a touch of sulfur. 11/8 - opened a bottle and it was completely flat. I poured it out and am hoping that I forgot to put the sugar pill in. 11/17 - bottled the Graff today, 1.010.

Notes:

Clear in bottle but has a chill haze. Light yellow and pours with 1 finger of soft foam that stays. Aroma is a mix bread dough and grape juice concentrate, almost sweet, and a touch of phenolic. Flavor is similar but the grape juice flavor is kicked up. Body is thin to medium and nucleation is slightly sharp. Overall, this tastes very similar to Midas Touch, at least the clone I made. There is a lager like quality even as it is a bit crisp. This is an intriguing beer that I don't love but it's a nice change of pace. 4 stars for the novelty and good quality but it'd be tough to drink a lot of this in one go.
