First runnings are 1.065, which doesn't surprise me as the paint strainer bags I use were maxed out by this amount of grain and it didn't seem like the grains were as wet/broken down after the mash, which I let go for 90 minutes. I opted to pour 0.5 gallons of hot water on the grains after being pulled from the kettle to get more extract. Need to boil down to 2.3 gallons to hit target OG, though I only went to 2.5 gallons so I didn't quite make it up to 1.085 that I was shooting for. I took the gravity measurement at 90F, so maybe I hit 1.080 but it's not significant at this point. Later in the evening, dry hopped and added the jalapenos. The airlock is bubbling very rapidly. 4/30 - bottled today straight from the fermenter with sugar pills. Sample tastes peppery and fruity, great flavor. It's missing the heat is the only problem, and could be a touch more bitter.

Notes:

Pours dark orange with 1.5 fingers of foam. Aroma is primarily jalapeno - jalapeno that is baked a bit like jalapeno poppers - and a light edge of sweet fruit cup. Flavor is the same as aroma but there is a definite bitter edge at the end that yields to a fruity yeast breath. Body is medium and soft, pillowy even. This beer would be perfect except that it is missing spice. Perhaps jalapenos are not spicy enough to impart heat but their flavor is spot on. 4 stars but would be 5 with heat.
