(Include any important notes from brew day until tasting)
Smooth brew day, Mash temp was good, hit 150.7 to begin and ended at 149.9 and came in a big heavy on the volumn, I poured out a guard or more and hit 1.060 SG. Beer looks great, a nice yellow color and he wort tastes great. Hoppy but not bitter, I'll add the first dry hop on day 2 or 3 depending on how quickly fermentation takes off and then add the second after fermentation is complete. Added first dry hop on 4/18 while fermentation was still active. Beer smells great. Added the 2nd dry hop on Thursday 4/25 and took a gravity reading. The beer was at 1.008, that yeast really fermented hard, I had a huge slug of yeast in my blow off jar when I cleaned it out. Beer tastes good, young though, still very hazy. Bottled today, 4/30 and the beer is still very hazy, great color an hop flavor and aroma, maybe a bit too dry. Very nice, we'll see how it tastes once carbed.

Gravity Estimates
Based on boiling 7.00gallonsliters at 1.053 for 60 minutes, this will decrease your wort by 1.00gallonsliters, bringing your after boil OG to 1.061.
You were planning on an OG of 1.061 so you are right on track. Nice job!
