Experimental Grapefruit Hop IPA Brew Session

First runnings are 1.045. Enzymatic activity continued and my starting boil gravity was 1.047. Pretty darn good efficiency for no sparge. Started whirlpool at 172F. Second addition into whirlpool at about 160F. Based on 11.5g pitch: Yeast Pitch is 10.58g Safale S-04, 0.575g Safbrew T-58, 0.345g Safbrew WB-06 12/1 - the airlock is bubbling regularly so that's a positive. I will throw in the first dry hop addition tonight or tomorrow morning, once high krausen is achieved. 12/8 - second dry hop added 12/11 - bottled today. Pulled 1.009 on the pycnometer. Flavor is very fruity and, surprisingly, not as resinous as I was hoping.

Notes:

Pours opaque orange with 2.5 fingers of foam. Aroma is a mellow orange citrus and yeast phenolic; there's some additional fruity aroma there but difficult to clearly identify. Flavor follows the nose but the flavor is more pineapple intensity than anything with a little bitterness at the end; on the breath, there is a touch of wheat bread malt character. Body is medium and there's a bit of nucleation sharpness but not much. Overall, this is a great hazy IPA though I wish there were more bitterness and hop intensity. The inclusion of malt flavor to a small degree is great. I will give this 4 stars as I really enjoy it but it's not as resinous as I had intended.
