Hot Dump Amber Ale Brew Session

Brew Session Info

First runnings are 1.051. I added the remaining leaf hops that I have to the mash and their filtration is awesome. My gravity was coming in a bit low so I opted for 15oz of brown sugar towards the end of the boil to get back to the OG I wanted. I need to adjust my mash water volume or my sparge. Perhaps I could drop 0.5 gallons from each. I struggled with the sparge water pH, first really low and then high. My local water must be changing as I seem to have problems with it more lately. I will be adding 2oz of Bravo just after high krausen and then finish off my jarrylo and loral as a dry hop. 9/19 - this is humming along now at 24 hours later. I think the stall was 9 hours. 9/20 - last night, since primary fermentation is slowing, I added 1.5oz each of Mosaic and Bravo. I've been reading a lot about geraniol and linalool oil biotransformation and bravo and mosaic hops, surprisingly, have some of the highest concentrations so I threw in what I had of Mosaic and matched it with Bravo. 10/2 - dry hopped today with 3 days to go before bottling, 1.3oz each of Jarrylo and Loral. 10/5 - prime with 107g of dextrose. FG of 1.0105. The sample tastes great, lots of tropical fruit flavor and then a hit of malt.

Tasting Notes (1)

CheeseNips

Notes:

Pours dark orange with 1.5 fingers of foam that goes nowhere. Aroma is melon and candy, maybe some yeast ester but only slight at that. Flavor is an unripe peach or melon through all phases. Body is pretty thin and soft, not much nucleation sharpness. Overall, the flavor is not what I care for. The flavor and aroma are dominated by Jarrylo hops, which I don't really care for now that I'm really tasting them. I'll say that the beer quality is fine, but the flavor and aroma are not my cup of tea. 3 stars.
