Initial gravity in fermenter was 1.026, added 1 lb cane sugar on 12/19/14. Dry hopped 1 oz leaf Simcoe About 1/2 of the leaf hops were still floating in carboy. Auto-siphon open slot acted as barrier for larger leaf pieces, only a small amount of small hop particles made it to bottling bucket and bottles were filled free of hop debris. Hop aroma was very strong during bottling.

Notes:

Beer was clear, compact yeast layer at bottom, light yellow-gold, weak head. This was a partially filled bottle, last bit in the bucket. Pronounced citrus aroma upon pouring. Simcoe hop flavors dominate, pine-herbal, some citrus. Only slight malty notes. Hop bitterness lingers. Very light mouth feel, a very light-bodied beer. A good light beer showcasing Simcoe hop characteristics.
