Steeped specialty grains in 2 gallons spring water at 140-150F for 30 minutes and rinsed grain bag over strainer with 1 gal at 160 deg. (Later I soaked some of the "spent" grains in hot water and had no further extraction of color). Mixed in 7 lbs Light LME and 2 lbs of DME, 4 gallon boil volume. Added hops per recipe. Cool down from 212 to 95F via immersion chiller in 30 minutes, added 2 gallons 40F spring water to fermenter, pitching temp at 73F. Post boil OG of 1.076 was above recipe calculation of 1.071. I may not have mixed the top off water into the wort sufficiently before sampling and drew a denser wort sample from the bottom with the wine thief; this could explain high OG reading. Wort color was on target and tasted balanced, with a nice bitterness to finish. Active airlock started 26 hours after pitching. Airlock quiet after 48hrs of very active bubbling. SG on 11/10/14 was 1.022 when racked to secondary. Airlock bubble still at 1 per minute 5 days after racking to carboy. Temp. 66F. Well carbonated at 14 days.

Notes:

100 days from bottling. Dark amber with full tan head. Fruity aroma, Caramel sweetness at first with a well balanced bitterness. Apricot flavor notes linger, malty finish. Very good.

Golden amber in color with good head, long retention time Some fruit notes Peach and apricot flavors stand out, with a balanced bitterness and good finish Good body, full character Very good example of the El Dorado hop's stone fruit flavor and bittering characteristics.
