10/5/2014 Added yeast to wort. Package did not swell. Yeast was bad and did nothing. Need to repitch.
10/8/2014 Fermentation started before I could repitch. Bubbling really well after 4 days. Did not repitch, we'll see what happens.
10/12/2014 Still fermenting. Down to about one bubble every second. Another day or two I will transfer and add cherries.
10/13/2014 Transferred to secondary, 5 gallons on top of 1 jar of maraschino cherries with juice. 3/4 gallon into a one gallon bottle, plain. Gravity 1.035
10/20/2014 Added 2 Vanilla Beans and 1 ounce Jim Beam Devils Cut 90 proof bourbon.
10/23/2014 Added 1 ounce toasted oak chips soaked in 1.5 ounces Jim Beam Devils Cut 90 proof bourbon. Tasted a small sample, tasted wonderful. Bottled small bottle of plain porter, 8 bottles, 3/4 gallon, .75 ounce honey to prime. FG 1.030. Kind of high, we'll see how it turns out. Used 5 ounces honey. Bottled 45.5 12 ounce bottles, 3 22 ounce bottles.
