Pumpkin Pie Ale based off of Pumpking ale. I made one batch almost the same before that everyone really liked. This one I am attempting to make a little sweeter with higher mash temp and another 4 ounces of Lactose, also added 1 pound of Melanoidin. The extracts are starting points, adjust to likely after fermentation in secondary if more concentrated flavors are desired.

Special Instructions
- Heat 5 gallons of strike water for mash to 174F, heat 4 gallon of water for sparge to 170F for a 7 gallon of mash for boil based on 1 gallon of loss per hour. Add Irish Moss last 15 minutes of boil
- Adjust extract flavorings in secondary to meet prefered taste.
- Primary fermentation 14 days at 67F and rack to carboy
- Secondary fermentation 30 days at 67F, add finings once FG is reached, allow 4 weeks
- Use all of one base grain if desired, I have done both. I just had extra MO and 2-row to use up.
- To intensify the pumpkin put pumpkin in grain bag during mash and hang bag in kettle during boil for about 15 minutes.
- I like mashing all my grains and hops during boil in grain bags, I use a wooden dowel rod across the kettle. Seems easier to clean up and works just as well for me anyway.
