First time using a hop stand of half an hour with the final addition hops from flame-out. Created just the taste and aroma I was looking for. Very tropical-hop notes in the aroma and first taste then sliding away to a malty bitter finish.

Brewed for a brew club competition. It won! Proper English bitter a little darker than originally expected but nice balance from these hops of bittering and classic slightly fruity aroma.

Gamma Ray Cloneish

by SunshineAles on 3/8/2017
All Grain | 6 Gallon(s) | American Pale Ale | 5.5 % ABV
Brewed for a brewclub competition. Wouldn't normally do a clone but it does give me a chance to try out way more hops than I would usually do. Colour and aroma have come out really well, taste probably a touch on the sweet side but overall very pleased. I can definitely see the benefits of large hop schedule
Choco Challenge

Choco Challenge

All Grain | 6 Gallon(s) | Special/Best/Premium Bitter | 4.4 % ABV
Beer kegged and naturally carbed. Nice, straight English bitter, slight sweetness from the choc malt balances to a nice peppery bitterness from the late hop additions. Good beer.
Snaff Ale

Snaff Ale

by SunshineAles on 1/18/2017
All Grain | 7.6 Gallon(s) | American Pale Ale | 5.0 % ABV
Beer brewed for Cheltenham races. Kegged and carbed. Took a long time to settle and although easy drinking is probably a little on the sweet side. An earlier bittering hop would enhance this ale.
I Endeavour to Smash

I Endeavour to Smash

by SunshineAles on 1/7/2017
All Grain | 6 Gallon(s) | American Pale Ale | 4.6 % ABV
Brewed for a brew club meeting where a SMASH is this months competition. First time I have used Endeavour hops and although the beer starts in the mouth like a crisp lager the finish is almost floral with a hint of berry in the aftertaste. Hopefully it'll get a prize!
A Pale full of Sunshine

A Pale full of Sunshine

by SunshineAles on 1/4/2017
All Grain | 6 Gallon(s) | English IPA | 5.4 % ABV
Went for a quick turnaround and is the first I've kegged in a commercial keg. Managed to get grain to glass in 9 days however the beer was not clear but tasted great. Clean, crisp but with fruity hops coming through in the aroma and taste. After 3 more days under pressure in the keg the beer has cleared well and still tastes great!

A Roast and Smash

A Roast and Smash

by SunshineAles on 10/26/2016
All Grain | 6.2 Gallon(s) | Blonde Ale | 3.9 % ABV
Roast 1lbs of the malt for 30min at 350F before mashing. Mash in 3.5g, then sparge with 1-1.5g. Partial boil. The taste is clean with a nice toasted malt flavour, just what I was looking for from the roasting. Cooled, this would be a good summer ale and will be the base for future brews.
Choc Otter Bitter

Choc Otter Bitter

by SunshineAles on 10/24/2016
All Grain | 6.2 Gallon(s) | Special/Best/Premium Bitter | 4.3 % ABV
Really straightforward, thrown together bitter. This yeast, as ever, really got to work fast on this and produced a very clear, well carbonated beer with smoky bitterness and a touch of sweetness from the choc malt.
Yellow Otter Lager

Yellow Otter Lager

by SunshineAles on 10/8/2016
All Grain | 5 Gallon(s) | Bohemian Pilsener | 5.6 % ABV
First time lager made with totally un-lager ingredients. We shall see. Very quick turnaround for a lager, grain to glass in 4-6 weeks. Ended up being a really clear, fruity, citrus type lager well liked by all that tried it. The extra malt tastes from the marris otter really worked well with the Amarillo. Well worth doing.
Christmas Choc Ale

Christmas Choc Ale

by SunshineAles on 9/28/2016
All Grain | 4.81 Gallon(s) | American Stout | 5.9 % ABV
Smaller batch to be brewed mid-October and matured until Christmas for the family. Not fined in the end. When primed for bottling boiled a cinnamon stick with 3.5oz of white sugar to add in.
Fastest Bitter First

Fastest Bitter First

by SunshineAles on 9/23/2016
All Grain | 6 Gallon(s) | Special/Best/Premium Bitter | 4.1 % ABV
Brewed to be a quick grain to glass bitter, retaining some malt character and hop overtones. Grin to glass achieved in 3 weeks, producing a very clear and tasty bitter. Marris otter really comes through to start and a fruity sweet tobacco aftertaste.
Texan Gold

Texan Gold

by SunshineAles on 9/16/2016
All Grain | 6 Gallon(s) | American Pale Ale | 4.7 % ABV
Mashed overnight starting at 156f,after 10 hours started the boil wort at 145f. After primary for a week, transferred to secondary and dry hopped for last 3 days. 43 bottles yielded. First bottle tried after a week, well carbonated. Smell isn't as hoppy as I thought I would be, taste is like a malty lager with a bitter twang. Overall a nice straight forward beer but probably lacks a little character.
Big Boys Best Bitter

Big Boys Best Bitter

by SunshineAles on 8/18/2016
All Grain | 6 Gallon(s) | Extra Special/Strong Bitter (English Pale Ale) | 5.8 % ABV
Brewed to be a straight forward strong bitter, and that's exactly what it is. Honestly, I think more bittering wouldn't go a miss but it's very smooth and easy drinking as it is. The yeast attenuated so far it was strange, even double calibrated my hydro to make sure.
A Cascade Of Salmon

A Cascade Of Salmon

by SunshineAles on 8/9/2016
All Grain | 6 Gallon(s) | American Pale Ale | 5.1 % ABV
Overnight mash. Transferred to secondary after 8 days. Dry hopped with three days to go until bottling. After bottling the clearing has taken a lot longer than either gelatine or straight conditioning. As this is the first time I've used clarity Ferm I think I might stick to gelatine for fining from now on! The beer smells very fruity after the Chinook dry hopping and I will definitely use these hops for dry hopping again. Tastes great and smells fantastic although the aroma has dissipated with ...
The Dark Challenger

The Dark Challenger

by SunshineAles on 6/28/2016
All Grain | 5.8 Gallon(s) | Robust Porter | 5.0 % ABV
This was originally intended to be a 3 stage multi stage mash but as it was my first multi, I forgot to stir! Ended up having to remove and cool part of the mash and add cold water to get back to mash temp. However, after that a dry hopping which I intended to be 4 days I changed to 7 to allow more drop time and this definitely worked. Very porter taste and good hoppy finish with great mouth feel. Overall, very pleased.
Good-Day Vienna

Good-Day Vienna

by SunshineAles on 6/13/2016
All Grain | 5.75 Gallon(s) | American Pale Ale | 5.0 % ABV
A very light lager looking ale using the yeast washed from 'Lick Your Bitter Lips'. Originally left in primary for 13 days and then bottle conditioned. Clear after 7 days, sampled after 9. A really good, easy drinking beer that I will brew again, only next time I would do a secondary fermentation and dry hop.
Lick Your Bitter Lips

Lick Your Bitter Lips

by SunshineAles on 5/20/2016
All Grain | 5.5 Gallon(s) | Extra Special/Strong Bitter (English Pale Ale) | 4.5 % ABV
Mashed at 158F for 75mins. Let ferment out for 13 days in Primary then bottled. Conditioned for 2 weeks in bottles at room temperature in a cupboard. Colour is classic pale bitter, smell is actually slightly too hoppy and I'd put the second addition in a little earlier when brewing again. Taste is exactly what I was after, full bodied and malty but with a nice bitter finish.
