Swapped Pilsen for Maris Otter, scaled to 13.3 gallons output to fermenter and bumped up hops slightly. Changed to English Ale yeast Safale US-04 Changed chocolate to Simpson's English coffee malt Target mash temp 153F Red agent beet juice. 200 drops in 4.7 gallons OG actual 1.051 FG actual 1.009
A clone of my Irish Red, using the Pearle hops I've had and been needing to use (rather than the more traditional East Kent Goldings) and slightly adjusting the malt to bring the SRM within the proper range.
