Use grater for 2 orange peels and then take peels off 4 others in strips. 3 oranges and the peels of 2 grated go in bag in 160 degree water to cool before primary pitch for fruit bag. 4 oranges get peeled in strips and candied by water purging in water 3X right before boiling and then in sugar in water 2 cups of each for 45 minutes. Candied simple syrup goes in primary and peels go in after first racking.
