Brewed using maple sap water instead of water and then aged in oak chips that have been soaked in 14 year-old Bookers Bourbon. Vanilla beans added in the secondary.
Based on my version of Kitty Hawk Porter from the Briess recipe database, which called for 6.6 lbs of Sparkling Amber LME and 2 lbs of Porter DME. I can't find Porter DME. My original adaptation used 3.3 lbs each of Amber & Porter LME and 1 lb each of Amber & Traditional Dark DME. Here, my adaptation gets an upgrade with 1 fewer lb of DME (eliminating the Amber) to bring the ABV into the proper range, and the addition of some steeped grains for more color and flavor.
