Had a good mash. Used 8.5 gallons of distilled water that yielded nearly 8 gallons of wort, so I boiled for 10 extra minutes to boil down the wort. I added 0.5 (I didn't use a scale, so I likely added nearly 0.65g of hops) prior to boil (FWH), then added the remaining hops at 60 mins. Added the flame-out hops and quickly cooled down the wort to 180 degrees F for 10 mins (less than 15 mins). What Styles Are These Recipes?
It's not uncommon for a homebrewer to craft a homebrew recipe that does not satisfy the specific guidelines of the BJCP style guidelines. For example, a homebrewer might make an IPA recipe and decide they want it to be more bitter or darker than the defined style.
There are plenty of great homebrew recipes that fall into this category and they should not be overlooked.
