By SD-SLIM KEEP IBU at 11.9ish! Mashed at 156F, lost 3F over 60 minutes on a windy, but nice 70F day. Came out at 1.050 SG (corrected). pH at 5.56. Next time, add more than this recipe demands because at 71% est. efficiency like normal, it just wasn't happening for me, even after water correction. I mashed for 60 minutes too, not 45 like the recipe stated. Started with 7 gallons, and landed right at 4.5 gallons! I used 1oz of lime zest instead of .5 lime zest because I was using a cheese ...

Mash at 153. Add Honey at FO. Wait an additional week before drinking. Tasting Notes: malty aroma and BIG malt flavor. Enough hops to just balance it out. I entered this in the 2011 Peach State Brew Off taking 1st place. Thhis has a DEEEEEP red color and is big on the malt flavor. Enjoy Recipe @ 69% efficiency w/ Honey = 1.062 OG Recipe @ 69% efficiency w/out Honey = 1.055 OG Full 14 days for fermentation. Wait 4 weeks for bottle conditioning so that it mellows.

It's not uncommon for a homebrewer to craft a homebrew recipe that does not satisfy the specific guidelines of the BJCP style guidelines. For example, a homebrewer might make an IPA recipe and decide they want it to be more bitter or darker than the defined style.

There are plenty of great homebrew recipes that fall into this category and they should not be overlooked.
