Mash for 60 minutes at 152F in 4.1 gallons of water. Collect about 6 gallons of wort and boil hard for 90 minutes, adding hops with 60 minutes left in boil. Shoot for a yield around 4 gallons. Cool wort, siphon to fermenter, aerate and pitch yeast from big starter. Ferment at 68 ?F.?

Protein Rest 2.5 gal water for protein rest - 135F to 124F in tun, no preheat water Mash Could not get temperature up to 152F for mash. Had to add almost 2.5 gal of water - Next time use high temp water to raise temp higher Sparge

It's not uncommon for a homebrewer to craft a homebrew recipe that does not satisfy the specific guidelines of the BJCP style guidelines. For example, a homebrewer might make an IPA recipe and decide they want it to be more bitter or darker than the defined style.
