Special Instructions

1.
Strike water: 2.5gal distilled H2O treated with 3g Gypsum & 8g CaCl2 pellets
2.
Add all grains and bring to 170'F. Turn off heat and steep for 15 minutes
3.
Sparge with 1gal dist. H2O at 170'F (treated with 2.5g Gypsum & 5.5g CaCl2 pellets)
4.
Bring to a boil, remove from heat and add 3lbs. DME
5.
Return to boil, add Columbus hops and start 60min timer
6.
At 55 minutes, add 2lbs. of corn sugar
7.
At flame out, add 4lbs. DME and fully dissolve
8.
When temp. is at 170"F, add whirlpool hops to spider and mix for 20min
9.
Cool to 68"F, take OG reading, pitch and aerate well
10.
3 days after pitching, add 1st dry hop addition (in mesh bag)
11.
After 1 week, rack to secondary and take a gravity reading
12.
4 days before bottling, add 2nd dry hop addition
13.
Bottle as usual, keep at room temp. (68-70'F) for 2 weeks then store in cellar (58-60'F)
