50/50 RO H2O. Recheck water before brewday Strike with 3.5 (141F) gal to hit a 133F protein rest, add 2g CaSO4. Hold for 15 minutes. Add 1.3 gal to hit 152F. Hold for 30 minutes. Remove one third of the mash, and perform a mash out decoction. Boil decoction for 10 minutes, add back to main mash. Hold for 10 minutes. Vorlauf and lauter Acidify 5 gal sparge lqr to pH of 5. Copper up to 7 gal, boil 90 minutes. Add 2g CaCl and 1g CaSO4 to BK. KO as cold as possible. oxygenate wort, pitch yeast at 50F. Ferment at 50F-52F.
