This is an updated take on the second brew in my German smoked beer series. It's a moderately strong amber ale with a lot of malt flavor to blend with the smoke.
I've had to monkey around with the hop additions to get similar IBU's with weaker AA% hops (a familiar struggle these days). It was supposed to have two 1/4 additions, one at 60 and one at 30 (with 9.6% hops). The ones I have (8%) are leading me to put more in the bittering charge and then a far later addition, one that I have to imagine will lend itself to a lot more aroma. Hopefully that doesn't mess to much with the smoke and malt. All in all I'm 1 IBU short of the old target (which was between 27-28).
Also using the Omega yeast instead of the white labs German Ale/Kolsch.
