Water: Began with 4 gallons of tap water (2 filtered, 2 unfiltered)

Water: Added half of a campden tablet

Mash: Heated mash water to 164

Mash: Squeezed all wort form grain bag

Mash: About .5 gallons will be lost to the grain. Leaving 3.5 to start the boil with

Yeast: Added 1 smack pack of London Ale III
7.
Yeast: Added 1/4 packet of T-58 (did not rehydrate)
8.
Dry Hop: Add first dry hop addition during high-krousen
9.
Dry Hop: Second addition: Let sit for a full 4 days

Too much T58. Tasted like a witbier IPA...not my favorite. Next time don't use T58

Notes:

Interesting mouth feel (coats your mouth) after 1 week of bottling. However, it seems to be going away as the beer sits in the bottles a bit longer (~1.5 weeks). Will taste again after 2 weeks of being in the bottle, and see if the weird mouth feel went away.

    Efficiency was higher than expected:
    What did I do differently to get this?
    - Mash in: Expected: 164, actual 165
    - Double Mill Grains
    - Wrapped mash tun in towels, sleeping bag, and blanket. Set on
    top of mat and towel.
    - Drained and squeezed grain bag until no water drilled out
    - Added dextrose at 50 min during boil

    Started brew with 4 gallons of water
    Water lost to grains: Expected 0.5, Actual: 0.5
    Water boil size: Expected: 3.5, Actual: 3.5
    Water into fermentor: Expected: 2.5, Actual: 2.6

    Gravity Notes:
    - Pre-boil gravity (without dextrose): 1.055 (beer smith estimate: 1.046)
    - OG: 1.070
    - FG:

    Yeast:
    1/4 pack of dry T58
    - Left at room temp for more than 3 hours
    1 Packet of Wyeast London Ale III
    - Smacked and left to rest for more than 3 hours

    Dry hop additions:
    1st addition during high-krousen (expected: 4/16 morning)
    2nd Addition after stable gravity (~9 days into fermentation. Expected: 4/24 night). Leave hops for 4 days and then bottle.

    Efficiency notes:
    Expected 60%. Beer smith estimates my efficiency at 67.1%!
    - Why was it higher than 60%?
    - OG was higher than expected. Means I extracted more sugars
    from grains than I expected
    - Amount of wort into fermentor was more than expected.

    I'd sub out Nugget for Amarillo. Id also dry hop all 3 day before you bottle. Also water chem. is key. 2 or 3 to 1 for ratio is also key. With the yeast, I'd stay London III only (even though its not their yeast) and use a starter.

    Never squeeze the grain bag. It releases tannins in the beer and is probably the cause of your off flavor. Pour 170 degree water over grains to batch sparge next time.

    Hi Brewdog. Thanks for the tip. I know there are varying opinions about squeezing it, so I wanted to give it a shot with this brew to see if I got any off flavors. Since I did get off flavors, and I did sqeueeze it, I decided to stop squeezing the grain bag. I just brewed another recipe and didn't squeeze it.

    Hi TheBeerShop. Thanks for the advice. Only using London III is a good idea, the T58, even though I only used a little, was overpowering.
