Add Galaxy at flameout for one gallon in addition to the Mosaic at flameout - refer to it as 'Galaxy Brew' Target Mash Temp: 153 Actual Mash Temp: 152 Mash reads 153F should be 149F Stirred once after 20mins, seemed to drop 1degree. Mash therm not really working at all. Stirred a second time with 20 mins left, dropped another 2 degrees. Added 2 cups of water at 195F. Measured temp again and it was 150F. Going to leave for next 20 mins. Checked after 20 mins and it was 149F. Boil times were not exact, timer was ruined by preheating oven. Cooled one carboy in the sink and other in mash tun, only read one of the temps and it was around 70F. Pitched the yeast to both after dividing the yeast and found out one of the worts was still at 95F! Probably killed a bunch of yeast cells, o well. Fermentation temp took a day to get into spec. Fermentation is slow and not very strong. Mixed up the Galaxy and Mosaic carboys, so I have no clue which is which. Just an absolute shit-show of a brew day. Also, I oxygenated the wort by shaking before adding the yeast. Calculated Brewhouse Efficiency at 73% based off of unknown volume into fermentor. Estimated at 1.9gals.
