Blend of of the hops from the single hop series. Larger mash hop, more balanced water profile, first crystal 20, darkest beer I've made, more CaCl to enhance malt character, moving from 3% to 4.3% ABV. First time on stove top. Pitch - T 3/1 Day 3 - End temp F Day 4 - Dry hop S Day 6 - Dry hop M Day 8 - Cold crash W Day 9 - Keg (30psi, 12hr) R Day 9 - Reduce (6psi) R OG 10.4 FG 4.9 Missed the gravity likely due to the cooler mash temp. Didn't account for extra water lost by increasing beginning amount. Chill and hopstand went very smoothly. Cleanup super easy. Definitely a volume problem in the fermenter, which validates the concern. Using the siphon too was tough, seemed to leave a lot of liquid. Wort was super clear. Sprinkle yeast, ferm was going 10hr later. Swirl everyday during dry hop phase. Dry hops sinking with each Swirl so I added a third charge because the nose isn't where I want it to be. The most complex beer I've made. Very dank, sometimes seems sweet, sometimes more balanced, creamy mouthfeel, hazy, juicy. Def more malt presence too. This thing might be my best. Perfect balance, very orange juicy with 10 days in the keg. Dip tube is mega clogged. Need to filter going forward. Blew 3 weeks later, the whole time it had an orange juice kind of thing, and a noticeable malt presence.
