Special Instructions

HLT (mash water) - add 10 ml Phosphoric acid to reduce ph from 7.6 to 6.2

HLT (mash water) 10 g Calcium Sulphate (drier)

Mash volume 27.78 L
4.
Sparge water - 6 ml Phosphoric acid (topped up to 2/3rds)

Sparge volume (8.95 g / 30.2 L) Add 5 g Calcium Sulphate to HLT to adjust ph on additional water

Initial Runnings: 4.88 gal / 18 L
7.
Initial runnings: OG: 19 brix x 4 = 1.076 (sparge to dilute)
8.
Target OG: 1.062
9.
Check brix - initial gravity: 12 brix x 4 =1,048 (boil down to bring OG up to target)
10.
Started boil @ (14 brix x 4 = 1,056 specific gravity)
11.
Boil - 1 oz Nugget
12.
Boil - 15 mins to knockoff: 10 g calcium chloride
13.
Boil - 10 mins to knockoff: 2 whirl floc tablets
14.
Boil - 5 mins to knockoff: add 1st 4 oz aroma hops
15.
@ knockoff - add 2st 4 16 oz fresh hallertau hop addition
16.
@ 170 F (actual: 120 F) - add 3rd 4 oz hop addition
17.
@ 3-4 days into primary - add 4th 2 oz each of Citra & Amarillo hop addition into Speidel Plastic Fermenter - 60L (15.9 gal)
18.
4 days - gravity reading 1.010 dry hop addition (don't rack)
