Special Instructions

1.
Water chemistry for 8 gal: 1/2 tsp gypsum, 3/4 tsp calcium chloride, pinch of both magnesium and NaCl.
2.
Adjust pre-grain water to a pH of 6.0. Check mash pH (5.2 - 5.4).
3.
Mash in Munich and Pilsen at 145 F and hold for 30 min.
4.
Raise mash temp to 156 F and hold for 30 min.
5.
Add Victory and Carafa with 15 min left at 156 F.
6.
30 minute boil with hop additions as above. 220 V mode on the Anvil.
7.
Pitch a 1 litre starter of Saflager W-34/70
