Based on the Ruthless Rye IPA from Sierra Nevada, but with additional Rye. Rather than dry-hopping another 4 ounces of hops, oak chips are introduced to compliment the spice of the Rye. The oak chips are soaked in a fruit-brandy called "rakia," which is fermented grapes, pear, or peaches, and is the national drink of Bulgaria.

Special Instructions

  1. Add Irish Moss at 15 minutes until flameout.
  2. After 10 days, start soaking oak chips in just enough rakia to cover them.
  3. Transfer beer, oak chips, and rakia to secondary after 2-3 weeks.
  4. Bottle when target taste is achieved, usually 1-2 weeks.
