Special Instructions
- Mash in at 130° F and hold for 5 minutes
- Ramp to 144° F and hold for 50 minutes
- Ramp to 158° F and hold for 30 minutes
- Mash out at 165° F for 5 minutes
- For added black coloring add fine ground black prinz or black malt at mash out
- Boil for 90 minutes
- Add hops at proper intervals
- Add whirlfloc or Irish Moss last 15 minutes
- Ferment in primary for 10 days at 47° F
- Diacetyl rest for 3 days at 57° F
- Gradually lower to 48° F and hold for 8 days
- Gradually lower to 33° F and hold for 16 days
- Rack to carboy and clearify
- When satisfied clarity keg at 2.5 volumes or bottle condition with 4 oz. corn sugar
