Add 500mg potassium metabisulphite to 10 gallons water to remove chlorine/chloramine. Water treated with brewing salts to: Ca=110, Mg=18, Na=16, Cl=50, S04=279 (Basically Randy Mosher's ideal Pale Ale numbers with slightly less Sulphate). 8g CaSO4, 3g MgSO4, 1gNaCL, 2gCaCl2 - divided equally between strike sparge water. Add 2g lactic acid to sparge to get pH down to under 6.
