Liquid yeast WLP001 or WY1056 with starter if preferred. US-05 is listed as tolerant to 9-11% so it's probably ok but you may want to pitch two just to be sure. Brewed on 3/13/21: Total of 10 gallons of Distilled water used. Recirculated mash for 60 minutes. No issues. Seems that the mash wants to drop when recirculating tho. Maybe dont be so quick to recirculate. Wait for HLT to heat up first, then turn pumps on. Once HLT was set to 160, mash was recirculated for 10 minutes. After that time, all temps were equal at 148.
