Dry hop Amarillo, Citra, and Simcoe on day 5 of fermentation after racking to secondary. Dry hop Amarillo, Citra, and Simcoe again on day 8 of fermentation while still in secondary. Mash at 152 for 30 minutes. Sparge with 165 degree water
