Mash in 8 gal at 154 for 1 hour. Remove ~3 gal first runnings wort into side pot to boil to caramelization for 2.5 hours. Add first sparge water at 158. Remove ~8 gal of second running wort and boil for 2 hours. Bittering hops previously used to dry hop. Aroma/flavor hops added as a hop stand at 190 for 1 hour. Cool wort, add Bell's yeast. Ferment at ~60. Second sparge water at ~158, adding .75 lb Honey Malt to mash. After ~2 hours, take third running wort and add to hops from previous batch. ...
