Flaked oats instead of white wheat, S-04, trying to get bg/gu around 1, one more minute less on the mash. Very easy and good day, OG came in a little low. There was no K at all, leading me to think I used a lager yeast, which I didn't. Diacetyl rest on 7/25. Messed up kegging and got a huge amount of trub in there. Reducing mineral additions slightly, adding a flameout addition (as it's cooling), doing a smaller first boil addition but making it 20min, then a bigger 10m addition, more Munich, less pale, needs some sweetness so adding c-15. Everything went exactly as planned. Good yeast activity at 20hr. Still going at 48hr. After 3 days, it's at 2.4 Brix. Shook the fermenter to get the first dry hop to drop.
