Special Instructions

1.
Take yeast out of fridge
2.
ChemSan Sanitiser (10ml per 5 litres) (70ML - 35Lt) - Fermenter, tubes, air lock.

Water to Mash kettle. 18Lt
4.
Water to Sparge Kettle 17Lt
5.
Camden tablets to Both - 4 to Mash, 3.7 to Sparge. (5 Tabs per 23Lt)
6.
AMS to both - 15.5ml to Mash Kettle - 15ml to Sparge Kettle (22ml per 25Lt)
7.
DWB to mash kettle only 10g (13g per 25Lt)

Set mash kettle to 70C

Add mash bag.

Add mash. Temperature 65C - Mash for 60 mins.

Set sparge water temperature to 77C

Turn off mash kettle

Volaut

Drain wort into bucket

Add sparge
18.
Leave for 20 mins to rest
19.
Add sparge liquor to wort - Discard mash
20.
Add total liquor back into mash kettle - Boil for 60 mins

Add hop spider
22.
60 mins - Centennial hops
23.
15 mins - Haller Mitt
24.
15 mins - Add Protafloc 1/3 of tablet. (Half tablet per 25Lts)
25.
15 mins - Add cooling coil
26.
Turn off Kettle.
27.
Pitch yeast - 18-28C
28.
Hydrometer - OG 1056
29.
Store fermenter as cool as possible

Phoenix - Dry hop

Chemipro. Warm Water (4g/1Lr) (172g - 43Lt) Bottles. Syphon Tube and tap.

Clean Mash tun to fermenter tube. Spare fermentation drub container. Black stoppers. Airlock.

Sugar - 15Lt beer/30bottles - 130g sugar - 150ml water - 5ml per bottle
35.
ChemSan Sanitiser (30ML - 15Lt) (60ml per 30Lt) - Syphon Tube & tap, caps, bottle machine.

Hydrometer - OG 1011
39.
Chemiclean - 50g = 20Lts. Soak and hand wash. Hot water.
