Small, pale Belgian (3.0 to 3.5%) to be blended and refermented with ~2.5 gallons of an aged Belgian quad, aiming to produce a blend approximating a Belgian dubbel in strength and character. Brewed 10/26/2021 Secondary/blending 11/03/2021: Produced 3.6 gallons @ 1.030. Final (corrected refractometer) gravity: 1.006 (~3.1% ABV). Blended ~3.2 gallons with ~2.6 gallons 2019 Quad for refermentation. Bottled 11/22/2021: Blend had a synthetic O.G. of approx. 1.061 and a final (corrected refractometer) gravity of 1.011 for ~6.8% ABV.
