Special Instructions

1.
Step mash by pulling 25% of mash, boiling for 10 minutes and remixing with main mash to hit step temperatures.
2.
Mash out at 172. Boil for 90 minutes.
3.
Ferment at low end of yeast for 7 days and slowly increase temp until you hit high end yeast temp. Primary 2 weeks, secondary 4 weeks.

Notes:

Hit 75% efficiency and 82% yeast attenuation. The beer has a well rounded body with a great malty backbone and a bit of noble spice on the linger. I can't wait for this to be cold and carbed!
