Update, brewed and bottle carbonated for two weeks now. Tasting two bottles turned into four real quick. If you like Modelo Negra I believe you'll be happy with this beer. I'm already planning on brewing this again. I have have not brewed this yet. Just formulating a recipe. Finally got a climate controlled fermentation chamber. Wanted to brew my first Lager just because I can now. Realized that I don't drink many Lagers but have had and liked Modelo Negra. Found a few clone recipes that did not seem to follow what Modelo says is in their beer. "Munich Dunkel-style lager brewed with galena and super galena hops, caramel and black malts, and two- and six-row barley." Also, ingredients list rice. So this is my first attempt to piece together a recipe. Found the Austrian Expat Dark Mexican Lager recipe and began to tweak it to match IBU's and SRM. Substituted six row and added flaked rice and black malt. Unable to incorporate Super Galena hops and keep the IBU's in check so going with Galena only. I'll check back in once I get this Lagered and in the bottle in a few months or so. I am a BIABer and not sure of the mash steps/rests I will take yet.

Notes:

Tasted 7/11/21 after two weeks of bottle carbonation. Thrilled with clarity and flavor. Had to chill two additional bottles and ended up drinking four. After another week of bottle conditioning for good measure I will "lager" at 40 F. for a month or so. If I can keep my hands off of it. Planning on brewing this again.
