Special Instructions

1.
Decoction mash 95 degrees F.
2.
Draw off 1/3 mash (wort/grains) and bring to 158 degrees F. Hold for 5 minutes then bring to boil. Boil for 10 minutes.

Dump back into mash. Mash should be at 122 degrees F.
4.
Draw off 1/3 mash (wort/grains) and bring to 158 degrees F. Hold for 5 minutes then bring to boil. Boil for 10 minutes.
5.
Dump back into mash. Mash should be at 149 degrees F.
6.
Draw off 1/3 mash (wort/grains) and boil for 10 minutes.
7.
Dump back into mash. Mash should be at 170 degrees F.
8.
Continue with regular sparging and boil.
9.
Pitch yeast at lager temps, not room temp.
