Special Instructions

1.
14.5 gallons of strike water (1.65714 qt/lb of grain) with 13.31g 88% lactic acid
2.
Add 3.2g gypsum, 5.7g calcium chloride, 1.6g epsom salt & 1.3g Salt to strike water
3.
Fill HLT to 11gal & add 19.36g 88% lactic acid
4.
Add 2.4g gypsum, 4.3g calcium chloride, 1.2g epsom salt & 1g salt to HLT
5.
Infuse 8.5 gallons to hit 105F for 20 minutes then add 6gal boiling water to hit 145F
6.
Mash @ 145F for 45 minutes then direct heat/stir to hit 155F
7.
Rest mash at 155F for 20 minutes then direct heat/stir to hit 170F
8.
4.375 gallons of water absorbed by grain (.5 quarts per lb of grain loss)
9.
Recirculate till wort runs clear then collect 4 gallons before adding sparge water
10.
Sparge with 11 gallons heated to 180F
11.
add Irish Moss & Yeast Nutrient with 10 min left in boil
12.
Start fermentation at 48F for 4 days then increase by 2F per day till hitting 68F
13.
17.5 days after brew date lower temp 5F every 12 hours till reaching 33F
14.
Lager for 14 days then package(5weeks post brewdate)
15.
$70 per 5gal
