Nov 11/20 7am: Mashed with 19.82L. 3g CaCl2:2.5g CaSO4.

Hit 68c mash temperature. 45 minute mash.

Sparged with 17.35L, same salts but added 1ml phosphoric acid.

81c sparge water 62c grainbed = 71c mashout.

Nov 11/20 1pm: 21c wort into FC set to 21c. Patina on wort at pitch time, perhaps PBW?

Nov 12/ 20 7am: Laser temp 20.9c. Small krausen and bubbling. FC to 18c.
7.
Nov 12/20 10pm: Laser temp 19.5c. FC down to 17c.
8.
Nov 13/20 330pm: Added 1lb of D-180 sugar. Laser temp 18.6c
9.
Nov 16/20 645am: Turned FC up to 20c. Some krausen left and still bubbling.
10.
Nov 17/20 6am: Laser temp at 20c. FC up to 21c.
11.
Nov 20/20 7am: Laser temp 20.5c. FC up to 21.5c
12.
Nov 30/20 9pm: Started slowly cold crashing.
13.
Dec 13/20 : Bottling day! 4.81oz dextrose to 19.5L at 21.5c for 2.55 volumes. Added a bit of old M44 yeast.
14.
1/2 cup oaked rum to final 6L.
