This recipe is based on two very good things. First, this recipe is cloned from a friend's Pale Ale that was absolutely spectacular. I thoroughly enjoyed it every time I drank it. The second is Trader Joe's unsulfered and unsweetened dried mango. Several of the packages of Mango had a light bitterness that balanced perfectly with the sweetness of the dried fruit. The first time I had it, I knew I wanted to use it in a homebrew. Combined with the great Pale Ale recipe, I think this will make for an enjoyable pour.

This recipe was cloned from Pale Ale 41.

Saccharification Rest

Special Instructions

1.
Add 1oz Centennial Hops after hot break
2.
Add 1/2 oz Cascade Hops 45 minutes into boil
3.
Add 6oz Dried Mango 45 minutes into boil
4.
Add 1/2 oz Cascade Hops 55 minutes into boil
5.
Add 1/2 oz Cascade Hops at Flame Out
6.
Cool wort, pitch yeast, transfer to fermenter
7.
Wait 10 days
8.
Boil 6oz chopped Dried Mango and 2oz Cascade Hops in 3 cups of water for 10 minutes
9.
Cool mango and Hop mixture to 70F and add to fermenter
10.
Wait 7 more days
11.
Bottle, condition and enjoy

    ctorx, how did this turn out flavor wise with adding 6oz. to the boil and then another 6 oz. into the secondary? Was it a slightly sweet IPA or was it just a slight undertone of mango? I imagine that the Cascade hop addition balanced the sweetness?

    Haven't brewed this yet...I will be this upcoming Summer. I meant to do it this year and it just got away from me.

    Hi ctorx, will you put the dried mango and hops mixture in a hop bag or juss toss it directly into fermenter?

    I was planning on chopping the dried mango using a food processor (one or two small pluses, we don't want to puree it) and then steep it in some boiling water for just a minute or two before dropping it in the carboy. The thinking is that multiple smaller pieces will distribute the flavor better, and I think the short time in the boiling water will help it to break down a bit. I'm just not sure yet of the effect of the boiling water, or how long to boil...I don't wan't to extract all of the flavors out into the boiling water since I will be throwing it out.
