Special Instructions

1.
add all grains and stir 6 gal hot water into mash tun, cover and mash @ 150?F
2.
batch sparge another 3 gal of 168?F water after initial 5gal has been poured into boil pot, until it runs clear
3.
once all water has been passed through grain, begin boil to 212
4.
pre-boil gravity = 1.050 when cooled
5.
boil for 60mins total, adding hops in steps below
6.
once boiling, add first round of hops (60min)
7.
continue to add hops @ times listed, total boil is 60min
8.
cool wort and transfer to fermenter
9.
pre-ferm gravity = 1.070
10.
aerate wort and pitch yeast
11.
ferment at 68 ?F, once it falls clearish (**update with days**) ~6 days
12.
add dry hops in bag in primary fermenter, after ~24hours
13.
using muslin bags on each end of siphon, move beer to secondary fermenter (leaving about an inch of beer above sediment)
14.
boil 4oz of corn sugar in 2 cups of water, cool and add to bottling bucket, stirring gently
15.
using muslin bags again on each end again, siphon to bottling bucket
16.
bottle and let sit at least 3 days @ room temp/darkness
