Special Instructions

1.
Steep the crushed grain in 6.5 gallons of water at 155 degrees for 30 minutes.
2.
Remove grains from the wort and rinse with 2 quarts of hot water.
3.
Add the liquid and dried malt extracts and bring to a boil.
4.
While boiling, add the hops, yeast nutrient as per the schedule. 1 oz Northern Brewer pellet hops (60 minutes). 1 oz. Fuggle pellet hops ( 30 minutes). 1 Cascade pellet hops (5 minutes)
5.
Reduce wort temp to 75% and pitch the yeast.
6.
Let in primary fermentation for 7-10 days, and then move to a sanitized plastic or glass carboy.
7.
Slice to vanilla beans long ways and place in a sanitized mesh bag and tie closed with fishing line or sanitized string.
8.
Lower bag into secondary chamber and cap, with string hanging out.
9.
For a light vanilla flavor, leave beans in the chamber for 7-10 days. For medium vanilla, 10-14 days. For heavy vanilla, 15-20 days.
10.
Remove beans, and let age in carboy. I have found that that the best flavors start to come out after 3-4 months from your brew day.
