Special Instructions

1.
Pitch @ 68F and let free rise to 75F. Ferment for 3 weeks.
2.
Cold crash to 33F under 12 psi for 4 days. Transfer to serving keg on top of gelatin for 3 days. Dump trub.
3.
Bottle condition for minimum 2 weeks, but 1 year conditioning around 50F is best.
