I used distilled water, and added Gypsum and sodium chloride to reach desired water profile @ ~350ppm. Probably unnecessary in the long run, though it appears as though Briess does little in terms of water treatment during their mash. While the water was coming to temp, I mashed grains @ 152 for 30 minutes, and added this to modified water at 170f. I did a quick boil (35 minutes total roll) since I didn't want 60 minute additions. All hops used aside from Amarillo and Belma were cryo. Added 2oz equivalent total of cascade and Simcoe once the water reached boil. Tossed in ~1.5oz equivalent ~15 minutes later, and added wort chiller. 15 minutes later, I turned off the heat, and started the cooling process. Waited until 165 (6 minutes), then started adding 4oz of hops in non scientific batches, and whirlpooled for 45 minutes. End of whirlpool was 150. Turned water back on, and cooled to 66f. In a separate pot, I boiled a small amount of water and added some PicoZinc. Once cooled, I put it in the carboy, then aerated wort ontop of the PicoZinc. Pitched GigaYeast Vermont. Now we wait. 1/15 Hydrometer reading: 1.022. I dropped in the dry hops, and will let it ferment until I hit 1.015, and then fine with gelatin if it hasn't cleared up significantly. 1/18 Hydrometer: 1.019 1/22 Hydrometer 1.018. stirred trub gently to eek out some more activity. I want this bitch at 1.015. First extract beer that has stalled on me :| 1/26 1.015, smells like fruit juice. Racked into a keg, burst carbing will take a few days.
