Mash Steps

Special Instructions

1.
Heat 6.8 gallons SPARGE water in large kettle (30% distilled (2 gallons)) to 175 degrees
2.
Mix 3.3 gallons of MASH water in small kettle (50% distilled (1.56 gallons)
3.
Add 1 gram of gypsum and 15 ml of Phosphoric acid to MASH water
4.
Heat MASH water to 166 degrees
5.
Mix grains with MASH water in the mash tun (assume grains are at 68 degrees)
6.
Measure mash temperature. Should be 152 degrees.
7.
Seal mash tun for 60 minutes
8.
Slowly recycle liquid from tun until clear
9.
Slowly begin to collect wort while adding SPARGE water (45 min) from large kettle
10.
Collect 6.5 gallons of wort in small kettle and proceed to hop schedule
11.
Boil wort for 5 minutes
12.
Add 0.5 oz of Simcoe hops
13.
Boil for 40 minutes
14.
Then add 0.25 oz of Simcoe hops
15.
Boil for 10 minutes
16.
Then add chiller to kettle and bring back to boil
17.
Add 1 tsp of Irish Moss
18.
Then boil for 5 minutes
19.
Then turn off heat (flameout) and add 0.25 oz of Simcoe hops
20.
Cool wort to 75 degrees within 30 minutes
21.
Take hydrometer reading
22.
Pour wort into fermenter and top off at 5 gallons
23.
Aerate wort
24.
Move wort inside
25.
Pitch vial of Clarity Ferm
26.
Pitch yeast on top of foam and let it hydrate until creamy
27.
Gently stir yeast into wort
28.
Seal and ferment for 7 days at 68 degrees
